Easy Cheesy Chicken & Rice

This recipe is comfort food at it’s finest! Perfect for a fall evening or even when you just aren’t feeling well.

Ingredients:

  • 4 T. butter

  • 1 t. minced garlic

  • 1/4 c. flour

  • one can chicken broth

  • 1/4 c. water

  • 3 c. minute rice

  • 2 c. shredded chicken

  • salt & pepper

  • 3 c. shredded cheese

Directions:

Prepare minute rice per instructions, set aside. Melt butter in large sauce pan. Add garlic & cook for 1-2 minutes. Add flour & turn into a roux. Add chicken broth, water & salt & pepper to taste. Cook 2 minutes. Add 2 cups of shredded cheese. Stir until melted. Add chicken & rice. Pour into lightly sprayed baking dish. Top with remaining 1 cup of shredded cheese. Bake at 350 degrees for 20-25 minutes. Enjoy!
