Mexican Chicken Grill Packets

This has quickly become one of our favorite things to throw on the grill. There isn't much of a recipe -- more of just a list of things to throw together that we typically have at the house!

Grab as many chicken breasts as you need to feed your family & place each on a piece of aluminum foil. Sprinkle with a good amount of taco seasoning, really covering the top.

In a bowl mix together one can of black beans, drained (I used the seasoned kind & did not rinse them), one can of corn, drained (I used a mix of white & golden, but you could also use mexi-corn or frozen corn as well) & salsa.

Place equal amounts on top of each chicken breast & then top with fresh cilantro. Wrap the aluminum foil up & grill until cooked through. We serve it over rice.

  • chicken breasts

  • taco seasoning

  • seasoned black beans

  • canned or frozen corn

  • salsa

  • cilantro

  • rice
