Mom's Pumpkin Bread

Our family loves to have homemade quick breads on hand for easy breakfasts during the week. Most of the year our go-to is Chocolate Chip Banana Bread (recipe to come), but in the fall & winter months & especially around the holidays, we love pumpkin bread the most. This recipe is so delicious. It always comes out moist & I love that it makes two loaves. Enough to send some home with our older kids!

Here's what you need:

  • 1 c. butter, softened

  • 3 c. sugar

  • 3 eggs

  • 3 c. flour

  • 1 T. baking powder

  • 1 1/2 t. baking soda

  • 1 1/2 t. cinnamon

  • 1 1/2 t. cloves

  • 1 1/2 t. nutmeg

  • 1 can packed pumpkin

Preheat oven to 350. Cream butter & sugar. Add eggs & mix well. Set aside. Mix dry ingredients together; stir into creamed mixture just until moistened. Stir in pumpkin. Pour into 2 loaf pans sprayed with cooking spray. Bake for one hour. Let cool. Enjoy!

PS - My sister-in-law bought me these loaf pans when they lived in Germany. Aren't they gorgeous?!
